Couscous is an ingrediant that I have been using as a side dish for years, but I only recently discovered this salad. Since then I always prepare coucous this way. A simple and delicious salad that can be served as main dish in a hot summer days. I served it at birthday parties and everyone liked it. And the best is cold next day… if some left!

Instructions

- Wash, clean and dice the vegetables, wash mint leaves
- Cut the mini tomatoes in half
- Place diced vegetables and cooked couscous in a salad bowl

- In a small bowl, mix the ingredients for the vinaigrette dressing, seasone to taste
- Pour dressing over the vegetables and couscous and mix well, add mint leaves

- Cool the salad well and serve with roasted meat or other main dish
