Couscous is an ingrediant that I have been using as a side dish for years, but I only recently discovered this salad. Since then I always prepare coucous this way. A simple and delicious salad that can be served as main dish in a hot summer days. I served it at birthday parties and everyone liked it. And the best is cold next day… if some left!

Couscous salad.

Ingredients
  • 2 cup cooked couscou
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 larger onion
  • 1 cucumber
  • 2 cups mini tomatoes
  • 1/2 cup mint leaves
  • Vinaigrette
  • 6 tbsp olive oil
  • 2 tbsp white aceto balsamico (or wine vinegar)
  • 1 tsp mustard
  • 2 tsp honey
  • salt
  • pepper
Instructions
    • Wash, clean and dice the vegetables, wash mint leaves
    • Cut the mini tomatoes in half
    • Place diced ​​vegetables and cooked couscous in a salad bowl
    • In a small bowl, mix the ingredients for the vinaigrette dressing, seasone to taste
    • Pour dressing over the vegetables and couscous and mix well, add mint leaves
    • Cool the salad well and serve with roasted meat or other main dish
