Ingredients
400 g minced meat
150 g rice
1 head of kale
3 eggs
3 tablespoons bread crumbs
3 tablespoons grated parmesan
1 tablespoon vegeta (or salt and pepper)
Instructions
Fry the minced meat in a little fat, season to taste and cool. The amount of meat can vary. For this dish it is good to use the leftovers of meat ragout, bolognese or chopped homemade sausage… It can also be prepared without meat.
Cook the rice in salted water for half the allotted time
Clean the kale, cut into smaller pieces and cook for 5 min
Separate the eggs, beat the egg whites into a stiff batter
Coat the oven dish with butter and sprinkle with some bread crumbs
In a large bowl, mix well the rice, kale, meat, egg yolks and vegeta (salt and peper)
Add the beaten egg whites, stirring gently with a spatula, preferably 2-3 times
The mixture should be airy and foamy
Carefully pour the mixture into the prepared oven dish, flatten and sprinkle with the remaining bread crumbs and parmesan
Bake in a preheated oven at 200 * C for about 30-35 minutes until golden brown and crispy
