Lemon and yogurt bundt cake

A wonderful, scented and moist cake for a Sunday afternoon. Only a few basic ingredients are needed, and the freshness is given by creamy Greek yogurt. The lemon sauce further emphasizes the lemon flavor and makes the cake tasty and fragrant. It is very quick to prepare and really worth trying. Especially if you're a lemon lover, like me!

Ingredients:
  • 360 g flour
  • 240 g powder sugar
  • 6 g baking powder
  • 2 eggs
  • 250 ml greeek yogurt
  • 175 ml sunflower oil
  • Juice and zest of one lemon
Instructions
    • Using a mixer, beat the eggs with powdered sugar until foamy.
    • Add oil, yogurt and lemon juice and zest.
    • Mix the ingredients into a uniform batter.
    • Using a spatula, gradually mix in the sifted flour with baking powder, and mix it additionally with a mixer so that there are no lumps.
    • Coat the mold with oil and sprinkle with flour.
    • Oil the mixture.
    • Bake in a preheated oven at 180°C for about 35 minutes.
    • When cooled, coat with lemon sauce and garnish with roughly chopped pistachios. A pleasure!
  1. Preparation of lemon sauce:
    • Add a few tablespoons of powdered sugar to the squeezed juice of half a lemon and mix well to get a thick, silky sauce.
