Beside delicious blueberries in this recipe, Greek yogurt makes these muffins juicy, irresistible and balanced in taste. Ingredients
    Ingredients for 12 muffins
  • 1.5 cup flour
  • 1/4 teaspoon salt
  • 2 teaspoons (baking powder)
  • 2 eggs
  • 2/3 cups Greek yogurt
  • 2/3 cups cugar
  • 3 tablespoons lemon juice
  • 1 teaspoon vanilla flavoring
  • 1/3 cup melted butter
  • 1.3 cup blueberries (fresh or frozen)
  • For Streusel crumbs
  • 1 cup flour
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon
  • 6 tablespoons melted butter
Instructions
    For Streusel crumbs
    • Mix all ingredients with a fork and cool well before use. Put the excess tightly closed in the freezer.
  1. Muffins
    • In a small bowl, mix the flour, salt and baking powder
    • In a large bowl, mix eggs, yogurt, sugar, lemon juice, vanilla flavor and melted butter
    • Add the flour mixture to the liquid ingredients and mix into a thick, lump-free mass
    • Sprinkle the blueberries with 1/2 tablespoon of flour and mix them lightly into the mixture. Such coated blueberries will not fall to the bottom
    • Fill muffin baskets to 2/3 height
    • You can put some more blueberries on top
    • Sprinkle with plenty of prepared crumbs
    • Bake in a preheated oven at 180 ° C for about 20 minutes or until golden brown
