Shakshuka is a favorite dish of the Middle East, especially Israel, brought by immigrants from North Africa. Spicy, with lots of vegetables and eggs poached in a delicious vegetable sauce this dish doesn’t really need a recipe. This simple dish from one pot can be both breakfast and lunch or dinner (or something in between) is made from vegetables of your choice, mostly tomatoes, peppers, onions and eggs.

- Wash, clean and cut vegetables into smaller pieces
- In a deep frying pan, sauté onions and peppers in a little oil to soften them
- Add tomatoes, spices and stir

- When the tomatoes are soft add the chard and beans
- Boil briefly and season to taste
- Using a spoon, make small gap and crak eggs in them

- Cover / cook eggs until desired hardness

- Serve with roasted peppers and toasted bread
