I heard about shepherd’s pie a few years ago in Ireland and of course tried it! It was really interesting dish, that minced meat, vegetables, and on top baked mashed potatoes with cheddar, of course. And of course I brought the recipe home in a variant with minced pork, and I use vegetables depending on the season. And it’s great, especially to feed a bunch of people or offer guests something new. It works, every time!

    • Peel the eggplant, cut them into cubes, add salt and leave to stand for 15 minutes
    • Pour hot water over them and then drain / squeeze the liquid well and dry it on kitchen paper
    • In a deep frying pan, fry the eggplant in a little olive oil to get the color
    • Remove from the pan and set aside
    • In the same pan, sauté sliced ​​onions and carrots in a little oil
    • When the vegetables are soft, add the meat, chop it with a wooden spoon and fry, stirring constantly
    • Season the meat by adding salt, pepper, garlic, thyme, bay leaf and smoked paprika
    • Continue to fry the meat until it gets colored, 10 min
    • Now add sliced ​​tomatoes to the meat and cook covered for 20 minutes. Tomatoes will release liquid and the meat will simmer in the juice, if necessary add a little water (1/2 cup)
    • Add roasted eggplants and peas to the meat, stir them in and continue cooking for another 10 mins
    • Season to taste. The dish should be thick but not too dry.
    • Meanwhile, cook the diced potatoes in salted water
    • Squeeze it through a potato press or mash it
    • Add sour cream, butter, salt and ground nutmeg
    • Stir in egg and 1/2 cup grated cheese
    • Grease a casserole dish with butter and sprinkle with bread crumbs
    • Put the prepared meat and flatten with a spoon
    • Set the mashed potatoes on top and sprinkle with the rest of the cheddar and 1 tablespoon of bread crumbs
    • Bake in a preheated oven at 180 * C for about 20 minutes, to get a golden yellow color
